Dublin’s New Home for Real Mexican Tacos

Sinaloa Tacos was born from the memory of my grandfather, Melesio, and his famous tacos served from a small cart on the corner outside my great-grandparents’ home.
People from the neighborhood would gather around his carreta de tacos, drawn by the incredible flavor of his Sinaloan-style chorizo and the warmth he put into every dish.

Inspired by that tradition, I dreamed of bringing those same flavors and that same sense of community to Dublin — a place where students, families, and young people could always rely on delicious food and a welcoming atmosphere.

Today, Sinaloa Tacos continues my grandfather’s legacy, serving authentic Sinaloan chorizo tacos and sharing a piece of Mexico through every bite — now on wheels, here in Ireland.

COCHINITA PIBIL

Cochinita Pibil is a traditional dish from Yucatán made with slow-cooked pork marinated in achiote and citrus, seasoned with spices for a rich, tender, and flavorful result. Traditionally served with pickled red onions and habanero.
